The Bedouin tribe itself is a nomads tribe whose always moving in the Middle East and they have a characteristic in cooking mutton. The uniqueness of this dish is from the cooking method, which is fresh mutton wrapped in palm leaves, then cooked on very hot stones and placed in a sand pit for several hours, the goal is to make the heat evenly distributed throughout the roast meat.

Date palm leaves make the meat remain juicy and leave no dry texture. The aroma of the spices was very pronounced. Making this dish full of taste and quality that is worth and must be tried.
