Cook Like a Pro at Culinary MODENA

Don’t deny it. We’ve all had dreams of impressing someone or being impressed with a romantic candle light dinner set up at home. A three course meal, a glass of wine and most importantly… something that doesn’t break the bank. Which means a private chef is definitely out of the question. So what do? Learn to cook (or get someone else to do it).


Culinaria Modena is located in the middle of their showroom in Kuningan, easily accessible by all very pretty to boot. If just being there doesn’t inspire you to do some amazing cooking, then you should probably tell someone else to cook for you.


The demonstration room is fully equipped with all the latest equipment from Modena. A tilted mirror on the ceiling and a dedicated camera live-streaming stove activities from a birds-eye-view ensures that no student misses out on the action. The room is spacious but intimate with less than twenty students per class, any questions you have are answered straight away and dishes are tasted at each step of the cooking process.

The teacher this time around was Chef Stefu Santoso, a low-profile chef with a great talent for cooking and teaching. Chef Stefu is best known as the executive chef behind AMUZ and as the president of the Academy of Culinary Professionals Indonesia. Passionate about food, he’s generous with giving away his tips and tricks of the trade.


Apart from teaching you how to cook great food, he also teaches you a few ways to fancy it up using some simple plating techniques. A little bit of out-of-the-box thinking can elevate a simple dish to new levels. In this class, we were taught how to make a three course meal including a White Fish Ceviche and French DressingPumpkin Soup, and Seared Sirloin Steak with Carrot Puree.


After Chef Stefu wrapped up the demonstration, we all proceeded to the main kitchen area for the hands-on side of the course. At each of our individual cooking stations, all the ingredients had been prepped and measured out. A cut of Wagyu beef, a generous amount of red wine (which unfortunately was not for drinking), and various other ingredients littered the spotless stainless steel kitchen table.

The cooking started off slow with everyone too timid to ask questions, but as Chef Stefu made his rounds and gave advice on everyone’s performance, friends were made and dishes were created.
